Easy Entertaining Banner

It's football season and it's quite possible you'll be having friends in to watch the game. These are a couple of recipes that I am sure you'll like. They are easy and delicious. Meatballs and now chicken wings are always popular, not to mention, easy on the budget.

Give these a try and see what your friends think.

Apricot Glazed Ham Balls

Ham Balls
A delicious use for left over ham.

1 slightly beaten egg
1 cup fresh bread crumbs
2 Tbs. Unsweetened pineapple juice
1 tsp. Dry mustard
1/4 tsp. Salt
8 oz. Ground cooked ham*
8 oz. Lean ground pork
1/3 cup finely chopped dried apricots
Fresh or pineapple pieces, opt.

In mixing bowl place all ingredients and mix well to blend. Place 1" balls on a foil covered and sprayed baking sheet. Bake at 350F. for 20 minutes to brown slightly. While these bake make sauce. Place balls in with sauce. Cover and simmer for 20 minutes, stirring occasionally.

*Note: You can purchase a 7 oz. Pre-packaged slice of ham in the section of your market where they have ham or go to your deli counter. Serve on picks with pineapple pieces.

Sauce
1/2 cup unsweetened pineapple juice
12 oz. Jar apricot preserves
1 Tbs. Cider vinegar
1/2 tsp. grd. Ginger
Dash of allspice
Corn starch and water

Combine the first 5 sauce ingredients in large fry pan. Heat to combine and melt preserves. Add meatballs and simmer 20 minutes. Thicken glaze with corn starch and water. Makes 30 meatballs.


Asian Chicken Wings

Glazed with a terrific sauce. Remember this sauce when making ribs.

3-4 lbs. Chicken wings
Seasoned salt, your favorite
1 cup ( 8 oz.) bottled plum sauce, you may need two bottles
2 Tbs. Butter
1/8 tsp. Garlic powder
1 tsp. Chinese Five Spice powder
1 Tbs. fresh lemon juice
Olive oil

Cut tips from wings and discard. Cut wings in half at the joint (elbow). Wash wings and pat dry. Preheat oven to 375F. Drizzle wings with a little olive oil, toss to coat. (This helps browning.) Cover a baking sheet with foil and spray. Season wings and place on baking sheet.

Bake for 20-25 minutes or crisp. Using remaining ingredients combine sauce. Place wings in slow cooker and pour on sauce. Stir to coat wings. Cover and cook on low for 4 hours or Hi for 2 hours.
